Cooking hacks are a saviour. Period. So, when Dangal actor Aamir Khan shared his signature dish along with the secret ingredient he swears by, we took notes.“Main scrambled egg kamaal ka banaata hun (I make excellent scrambled eggs),” Khan told Mashable India.

He also shared the hack to ensure the eggs turn out fluffy. “Anda jab chodte ho toh usme aap namak daalte ho…jis bowl me usko whisk karne wale ho, usme thoda doodh bhi daalo. (When you add egg, you also add salt…then the bowl in which you are whisking, add some milk). Whisk it with the milk. The more you air it, the better it comes out. And then when you pour it into the frying pan, I don’t fry it hard. It remains a bit soft. Before it is done, I take it out. Not runny, but a little soft. It’s soft, it’s not hard. I garnish it with coriander leaves, green chillies,” Khan elaborated.

Taking a cue from the actor’s revelation, we asked consultant dietitian Garima Goyal whether this hack works.

Calling eggs one of the most versatile and nutrient-rich foods, Goyal said that how you prepare them does significantly change their health impact. “It’s not just about eating eggs, but also about how you combine them. Thoughtful pairings turn them into more than a breakfast staple, such that they become a targeted, healing meal for better energy, digestion and long-term metabolic health,” said Goyal.

While the hack may sound simple, it is rooted in good culinary science, said Goyal. “By adding a small splash of milk and cooking the eggs slowly over low heat, the proteins set gently rather than toughen up, resulting in soft, creamy, and fluffy scrambled eggs. The milk helps dilute the proteins, distributing heat more evenly so the eggs cook uniformly and retain moisture. This prevents the common rubbery texture that comes from high-heat cooking,” said Goyal.

From a nutritional standpoint, Goyal said that slow cooking also minimises the formation of compounds that occur when proteins and fats are overheated, making the meal easier to digest and lighter on the stomach. “The technique also preserves the eggs’ natural flavour and nutrients while allowing better control over seasoning. So, while it’s a simple kitchen trick, it enhances both the taste and the health value of the dish.
